Easy Asian Beef and Noodles

If you’re craving Asian cuisine but want a slightly “healthified” version, this meal is for you! It’s extremely simple and fast to make, and it is easy on your wallet.


 8 oz rib eye steak
2 tsp dark sesame oil, divided
1 cup green onion, sliced (1 inch pieces)
2 cup packaged carrot and cabbage coleslaw
2 (2 7/8 ounce) packages beef-flavor ramen noodles
1 1⁄2 cup water
1 tbsp low-sodium soy sauce

*To cut down on calories, use one package of beef-flavor ramen noodles and use 1 cup of water.

Pasta with Chicken Sausage and Broccoli

This pasta dish comes together quickly and is a really easy meal to make. It’s a great way to incorporate vegetables into your day while still enjoying a light pasta dish. You can use ground sausage or links, both are extremely flavorful additions to the meal.


14 oz package Italian chicken sausage, casing removed
12 oz uncooked pasta (or brown rice or quinoa pasta for gluten-free)
6 1/2 cups fresh broccoli florets, no stems (16 oz)
5 cloves garlic, smashed and chopped
1/4 cup grated Pecorino Romano or Parmesan cheese
2 tbsp olive oil, divided
kosher salt and fresh cracked pepper

Chocolate Peanut Butter Overnight Oats

In the mornings before work, I am all about a breakfast that is fast to put together or better yet, pre-made. I present to you Chocolate Peanut Butter Overnight Oats! Not only do you make them the night before, but you literally throw everything in a jar and stir/shake it up. My husband has been eating this every morning for 2 months- he’s obsessed (and I think you will be too).

1/2 cup unsweetened chocolate almond milk (I haven’t been able to find unsweetened, so I just use regular chocolate almond milk)

Tuna Patties With Cauliflower Garlic Mashed Potatos

Here’s a great weeknight meal that comes together quickly, is protein packed, and it’s super easy on your wallet. 2 6 ounce cans of tuna fish, drained
1/2 cup panko bread crumbs
1/4 cup finely chopped green onions

1 lb lean ground turkey
1 egg white
1/3 cup quick cooking oats
¼ tsp ground cumin
¼ tsp dried thyme

Have a craving for a classic Asian dish but don’t want all of the calories? There is a solution! This recipe for Mongolian Beef hits the spot and is only 415 calories per serving (if served over rice). It’s actually pretty quick to whip up and can be served over rice or noodles. The recipe calls for broccoli but I threw in extra green onions instead.


1½ pounds flank steak

I love salmon so much but I’ve never actually cooked it myself because I thought it would be difficult to cook correctly. Let me tell you- this recipe for Garlic Honey Ginger Glazed Salmon is not only super easy to make but it is probably the best salmon I’ve ever had! I paired it with a White Bean Caprese Salad which can be whipped up with the salmon in a little over 30 minutes for a healthy and flavorful meal!
