Chicken Mushroom Quesadillas

This week’s Skinny Dawg meal comes from Athens Refrigeration. This Jenn-Air recipe for Chicken & Mushroom Quesadillas is super flavorful and a great week night meal that can be thrown together quickly.

1 cup long grain rice
1 onion, chopped
2 garlic cloves, minced
2 cups low-sodium chicken broth
1 can (10 ounces) tomatoes with green chiles

Chicken Enchilada Casserole

This week’s Skinny Dawg recipe is a Chicken Enchilada Casserole from GimmeSomeOven.com.  These “stacked enchiladas” are sure to be a crowd favorite and are very simple to make.

-3 cups enchilada sauce
-16 corn tortillas, halved
-2 (15 ounce) cans black beans, rinsed and drained
-1 (15 ounce) can whole kernel corn, drained

I absolutely love chicken parmesan, but I don’t love the calories associated with frying the chicken. This version of the classic Italian dish involves baking the chicken which helps to reduce that calorie count. It’s a quick enough dish to serve during the week and can be very kid friendly. I served it with a green veggie medley over a bed of pasta.
