FETTUCCINE ALFREDO

I absolutely love fettuccine Alfredo but I tend to stay away from it because it’s not exactly the healthiest of options. All of that changed with I found this recipe. Heavy whipping cream is subsisted out with low-fat milk and chicken broth. You’ll still get all of the flavor that you love with this classic dish but without all of the calories. I also added sautéed chicken to my meal to add a little protein.

Ingredients:

  • 12 ounces fettuccine
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1 cup low-sodium chicken broth
  • 1 cup low-fat milk
  • 1 cup freshly-grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ? teaspoon ground nutmeg
  • fresh chopped parsley, for garnish
