Shrimp and Grits

This week’s Skinny Dawg recipe is from SkinnyMom.com and features a southern favorite, Shrimp and Grits. The prep for this meal is ridiculously easy and the outcome is absolutely delicious! The shrimp are full of flavor and are the perfect compliment for the creamy southern grits.

TOTAL TIME: 15 minutes SERVINGS: 4  SERVING SIZE: 1 cup of grits and 10 shrimp CALORIES PER SERVING: 425

shrimpIngredients: 

  • 2¼ cups Low Sodium Chicken Broth
  • 1½ cups skim milk
  • 1¼ cup Quick 5-Minute Grits, dry
  • ½ teaspoon salt
  • 1 cup Sharp White Cheddar Blend Shredded Cheese
  • ½ teaspoon black pepper
  • 1 pound raw medium shrimp, peeled and deveined
  • 1 tablespoon Old Bay® seasoning
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons minced garlic
  • 4 green onions, thinly sliced
