Baked Chicken Parmesan

I absolutely love chicken parmesan, but I don’t love the calories associated with frying the chicken. This version of the classic Italian dish involves baking the chicken which helps to reduce that calorie count. It’s a quick enough dish to serve during the week and can be very kid friendly. I served it with a green veggie medley over a bed of pasta.

Ingredients

  • 4 (about 8 oz each) chicken breast, fat trimmed, sliced in half to make 8
  • 3/4 cup seasoned breadcrumbs baked chicken parmesan
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp butter, melted (or olive oil)
  • 3/4 cup reduced fat mozzarella cheese
  • 1 cup marinara
  • cooking spray
