Have a craving for a classic Asian dish but don’t want all of the calories? There is a solution! This recipe for Mongolian Beef hits the spot and is only 415 calories per serving (if served over rice). It’s actually pretty quick to whip up and can be served over rice or noodles. The recipe calls for broccoli but I threw in extra green onions instead.
Ingredients:
- 1½ pounds flank steak
- ¼ cup cornstarch
- ¼ cup reduced-sodium soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons brown sugar
- 2 tablespoons sweet chili sauce
- 6 green onions, thinly sliced
- 2 tablespoons sesame oil
- 1 tablespoon minced garlic
- 1 teaspoon fresh grated ginger
- ? teaspoon red chili flakes
- 2 cups broccoli florets, cooked (about 1 small head)
- Two, 8.8-ounce pouches Uncle Ben’s® Ready Rice® Whole Grain Brown Rice
