Turkey Meatloaf Muffins

Try this recipe for Turkey Meatloaf Muffins, sent in by Mary Ashley Baker of Athens. Each serving contains two muffins, packs a 15 gram punch of protein, and has only 155 calories.


  • 1 lb lean ground turkey
  • 1 egg white
  • 1/3 cup quick cooking oats
  • ¼ tsp ground cumin
  • ¼ tsp dried thyme
  • 1 tsp dry yellow mustard
  • 1 tsp black pepper
  • 1 tsp chipotle pepper spice
  • ½ tsp salt
  • 1 tbsp garlic powder (or 1 clove minced)
  • ½ small onion (chopped)
  • ½ zucchini (chopped)


  • Preheat oven to 375 degrees.
  • Spray muffin pan with canola or olive oil (or use muffin tins).
  • Mix all ingredients together in one large bowl.
  • Divide spoonfuls of mixture in 12 muffin muffin pan
  • Bake for 20 minutes
