Are you looking for a pop of protein in your day that’s full of flavor but not calories? Try this recipe for Turkey Meatloaf Muffins, sent in by Mary Ashley Baker of Athens. Each serving contains two muffins, packs a 15 gram punch of protein, and has only 155 calories.
1 lb lean ground turkey
1 egg white
1/3 cup quick cooking oats
¼ tsp ground cumin
¼ tsp dried thyme
1 tsp dry yellow mustard
1 tsp black pepper
1 tsp chipotle pepper spice
½ tsp salt
1 tbsp garlic powder (or 1 clove minced)
½ small onion (chopped)
½ zucchini (chopped)
Preheat oven to 375 degrees.
Spray muffin pan with canola or olive oil (or use muffin tins).
Mix all ingredients together in one large bowl.
Divide spoonfuls of mixture in 12 muffin muffin pan
Bake for 20 minutes
