Tuna Patties With Cauliflower Garlic Mashed Potatos

Here’s a great weeknight meal that comes together quickly, is protein packed, and it’s super easy on your wallet. The tuna patties are baked in the oven instead of fried, and the cauliflower will have you thinking that you’re actually eating garlic mashed potatoes without the calories or the carbs. Did I mention this is easy on your wallet??
2 6 ounce cans of tuna fish, drained
1/2 cup panko bread crumbs
1/4 cup finely chopped green onions
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons lite sour cream
Preheat oven to 400 degrees F
Combine all ingredients and mix well in a bowl.
Form 4 patties (they will be wet) and place on a greased baking sheet
Bake for 20 minutes
Cauliflower Garlic “Mashed Potatoes”
1 large head of cauliflower, separated into florets
1 large chicken bouillon cube
1/4 cup skim milk
2 tablespoons I Can’t Believe It’s Not Butter
1 1/2 cloves minced garlic
Boil the cauliflower and bouillon cube for 20-30 minutes
Drain the water and place cauliflower into a blender/food processor with the milk, I Can’t Believe It’s Not Butter, and the garlic. Blend ingredients until smooth.
