Replacing starches with cauliflower is really popular now- you can make mashed potatoes, rice, tater tots, even pizza crust with cauliflower. This recipe uses cauliflower rice mixed with cheese and chicken sausage to make delicious “rice” balls that are low calorie, filling, AND pretty quick to throw together. One tip- don’t worry about making your own cauliflower rice, just pick up a steamer bag from the freezer section!
1 Italian chicken sausage link, casing removed (2 3/4 oz)
2 1/4 cups riced cauliflower, frozen works great
1/4 teaspoon kosher salt
2 tablespoons homemade marinara (plus optional more for serving)
