Mongolian Beef

Have a craving for a classic Asian dish but don’t want all of the calories? There is a solution! This recipe for Mongolian Beef hits the spot and is only 415 calories per serving (if served over rice). It’s actually pretty quick to whip up and can be served over rice or noodles. The recipe calls for broccoli but I threw in extra green onions instead.

Ingredients:

1½ pounds flank steak
¼ cup cornstarch
¼ cup reduced-sodium soy sauce
2 tablespoons rice wine vinegar
2 tablespoons brown sugar
2 tablespoons sweet chili sauce
6 green onions, thinly sliced

Baked Chicken Parmesan

I absolutely love chicken parmesan, but I don’t love the calories associated with frying the chicken. This version of the classic Italian dish involves baking the chicken which helps to reduce that calorie count. It’s a quick enough dish to serve during the week and can be very kid friendly. I served it with a green veggie medley over a bed of pasta.

4 (about 8 oz each) chicken breast, fat trimmed, sliced in half to make 8

Adding zucchini to the patties makes them extremely juicy and helps to cut down the calories. Serve them as a typical burger with a bun or eat them plain- either way they’re so flavorful!

Beef Fried Rice

This meal is quick to get on the table, and as an added bonus, packs a punch of protein to keep you feeling satisfied longer.

Salisbury Steak and Mushroom Gravy

This lightened up version of such a classic dish is sure to please even the pickiest of eaters in your household. Pair the Salisbury steak and mushroom gravy with skinny garlic mashed potatoes or rice for the prefect dinnertime meal.

Ingredients:

1 1/2 tsp oil
3/4 cup onions, minced
1 lbs 93% lean ground beef
1 lb 93% lean ground turkey
1/2 cup dry breadcrumbs
1 large egg
1 large egg white
2 cups beef broth
1/4 tsp salt
1/8 tsp ground black pepper, to taste
8 oz sliced mushrooms

Lomo Saltado is a great twist on your typical meat and potato meal. There is so much flavor happening with the peppers, onions, and steak and the potatoes are a great addition.
