Lasagna Pasta

Lasagna is often a favorite in many households, but it often comes with a long cook and prep time, a high amount of calories, and a mess to clean up. This week’s Skinny Dawg recipe from Recipe-Diaries.com takes the age old Italian favorite and lightens it up, cuts down the cook and prep time, AND puts it all in one pot for super easy clean up.

Crock-pot Balsamic Pork Roast

This week’s Skinny Dawg meal would be great for a holiday gathering or a simple week day meal. Served over rice or with a side of mashed potatoes or cauliflower “mashed potatoes”, this recipe for Croc-Pot Balsamic Pork Roast is super flavorful and extremely easy to prepare.

Ingredients:

2 pound boneless pork shoulder roast (sirloin roast)
kosher salt, to taste
1/2 tsp garlic powder
½ teaspoon red pepper flakes
1/3 cup chicken or vegetable broth
1/3 cup balsamic vinegar
1 tablespoon Worcestershire sauce
1 tablespoon honey

This week’s Skinny Dawg recipe is from SkinnyMom.com and features a southern favorite, Shrimp and Grits. The prep for this meal is ridiculously easy and the outcome is absolutely delicious! The shrimp are full of flavor and are the perfect compliment for the creamy southern grits.

This is a fantastic way to grill chicken. The marinade gives it a TON of flavor and it is really fast to put together. I would recommend marinating the chicken for at least an hour- the longer the better! I served my chicken with fried rice and sauteed asparagus, but it could go with pretty much anything!

SKINNY GARLIC PARMESAN FRIES

These Skinny Garlic Parmesan Fries are oven baked and use a small bit of olive oil and are a great side for any meal. They’re also pretty quick to whip up and have a much lower calorie count than traditional fries.

1 Clove garlic, crushed well
Canola cooking spray
1 Medium (6 oz) potato, russet or yukon gold, washed and dried

You’ve got to love a slow cooker meal that is ridiculously easy AND healthy, right? With this Crockpot Honey Garlic Chicken, you literally throw all of the ingredients into the slow cooker and in 4 hours, you have a delicious, restaurant quality meal.

Ingredients:

1 lb boneless, skinless chicken breast, cut into chunks
¼ cup honey
1/3 cup ketchup
1/3 cup soy sauce
3 garlic cloves, minced
2 ½ tablespoons Sriracha
1 tablespoon Italian seasoning
¼ cup chopped green onions

Directions:

Stir together garlic, soy sauce, ketchup, honey, Italian seasoning, and Sriracha
